Recently I did an egg fast (which I will post soon) and I wanted a sweet treat that would fit within the rules of this fast. So I decided to make these easy keto chocolate truffles.

They weren’t quite right for the egg fast but they were delicious and super easy so I will be making these as party of my arsenal of keto sweet treats while on my low carb diet.

You just need 4 ingredients and you can change them up in many ways. They are like keto fat bombs and the perfect use for an avocado that is getting ripe.

Why I love using avocados.

Avocados are great for this recipe because their high fat content creates a creamy and smooth texture. However I also like using avocados because they are a great source of good fats and they are high in fiber. They are also a great source of potassium and folate.(source)

So when you couple the avocado with a good dark chocolate cocoa powder and chocolate chips you actually have a very healthy low carb treat!

The 4 ingredients I used.

All you need to make these healthy truffles are 4 basic ingredients – an avocado, keto dark chocolate chips, Swerve confectioners sugar and good unsweetened cocoa powder.

So first off I used Lily’s chocolate chips. They are becoming more and more available. I found a big bag at Costco but I think they sell them at Target and at most bigger grocery stores. ChocZero chocolate chips are also a good brand to use.

And for cocoa powder I used this delicious Valrhona cocoa powder because it’s lower in carbs and very rich in flavor. Other easier to find cocoa powders are Divine cocoa powder and Guittard’s cocoa powder. They would be great substitutes.

Lastly I liked Swerve confectioners sweetener which is powdered erythritol but you can substitute your sweetener of choice like Lakanto or stevia. The powdered sweetener consistency does make it easier to combine.

But if you don’t have those use regular cocoa powder. You can find these items in my Amazon store if you can’t find them in stores near you.

How to make chocolate keto truffles.

Step 1: I used a glass pyrex measuring cup but if you don’t have one just use a microwave safe bowl and place your sugar free chocolate chips inside. Microwave for 30-60 second at a time until they are almost melted like the picture below. Once you stir it a bit it the chips will melt completely.

If you don’t have a microwave you can melt the chips in a small saucepan on the stove.

Step 2: Add the ripe avocado to a food processor and pulse until nice and creamy. You can do this by hand but it’s hard to get the lumps out.

Step 3: Now add the melted chocolate chips, Swerve confectioners sweetener and cocoa powder to the food processor bowl.

Process into a nice and creamy chocolate truffle mixture. Again you can do this by hand but it’s easier with the food processor. You can also try a hand immersion blender.

I would not try an actual blender since this is a small batch and it would be hard to get all of the chocolate goodness out of it.

Step 4: Below you can see what the truffle batter should look like. To make the truffles use a tablespoon and scooped the chocolate mixture up. Drop it into a bowl of extra cocoa powder roll truffles around with to coat and shape the truffle.

Then place them on a plate and freeze for 15 minutes so you could then roll them in your hands and make them into a nice round shape. You could try a cookie scoop but I didn’t want mine to be that big.

It is a little difficult to roll the mixture into balls but you could always refrigerate the mixture for about 30 minutes so the batter will firm up more. Then try making your truffles.

Step 5: Place the finished truffles on a plate in a single layer and cover with plastic wrap. Or add to an airtight container to store in the refrigerator. (Please scroll down to view the printable recipe card.)

Other coatings or toppings to try.

Below are some ideas of toppings you can use to coat your sugar free truffles. You can use shredded unsweetened coconut flakes. Or toast the shredded coconut for more flavor. Just place the toppings in separate bowls and go to it!

I rolled my truffles in cocoa powder but other ideas to try are chopped nuts (try walnuts, pistachios, macadamias, almond etc.) or even peanut butter powder.

What if I don’t like the taste of avocado?

You really can’t taste the avocado in these truffles as the chocolate flavor really takes over and they are a great source of healthy fats. However you can always use cream cheese with heavy cream oralmond butteror other nut butters.

Can I change the flavor of the chocolate truffles?

Yes just by add a bit of a baking extract that you find in any grocery store. You can try raspberry, cherry, mint, caramel or almond extract. Or try just add a half teaspoon vanilla extract etc. Just add a little when you are mixing everything together in the food processor.

You could also a just a pinch of cinnamon, espresso or even a very small pinch of cayenne pepper to add more depth of flavor to these truffles.

Well I hope you give these low carb chocolate truffles recipe a try. just bought some more Lily’s white chocolate and milk chocolate chips online and I will be experimenting with them to make different flavors of these low carb truffles!

You would be surprised that you can’t taste the avocado but it does give them that smooth and creamy texture. They would be great for a Valentine’s Day treat or sugar free dessert on a keto diet. Enjoy!

Easy Keto Chocolate Truffles Recipe

These easy and rich keto chocolate truffles make healthy and delicious sugar free treat. Full of healthy ingredients this keto dessert is also good for you with just 1.1g carbs and 3.1g fiber.

Ingredients

  • 1 avocado
  • 1 tablespoon unsweetened cocoa powder (I like Guittard, Divine brands)
  • 3 tablespoons Swerve confectioners sweetener
  • 60 Lily's chocolate chips (almost ⅓ cup)
  • extra cocoa powder to coat the truffles (optional)

Instructions

  1. Add the avocado to a food processor and pulse until nice and creamy.
  2. Add the rest of the ingredients to the food processor bowl and blend until it's a thick and creamy truffle batter.
  3. Add some extra cocoa powder to a small bowl and using a tablespoon drop a spoonful into the cocoa powder and roll around to cover the batter.
  4. Place on a small plate and continue with the rest of the batter. I got 9 truffles out of this recipe. Put the plate in the freezer for about 15 minutes to make them solidify more then take them out and roll them into a better shape.
  5. Place the finished truffles into an airtight container and place into the refrigerator until you are ready to eat them.

Notes

I used cocoa powder to coat my truffles but you could also use shredded unsweetened coconut, chopped nuts (try walnuts, pistachios, macadamias, almond etc.) or even peanut butter powder.

You could also toast the shredded coconut for even more flavor.
